The Ubuntu Desktop Course (https://wiki.ubuntu.com/Training) is a set of training material for Ubuntu prepared by the Ubuntu community itself.

The course consists of a 400-page book in two variants, one intended for students and one for instructors, available for download in PDF format. The sources are available in DocBook XML at the project's Launchpad page (https://launchpad.net/ubuntu-desktop-course), and everyone is welcome to contribute. The content is under the Creative Commons BY-NC-SA license (http://creativecommons.org/licenses/by-nc-sa/3.0/).

Mark Shuttleworth also posted (http://www.markshuttleworth.com/archives/134) to his blog about it yesterday:

Is it possible to have training materials that are developed in partnership with the community, available under a CC license, AND make those same materials available through formal training providers? We’re trying to find out at Canonical with our Ubuntu Desktop Course.

While it's mainly intended for formal training scenarios, there's nothing stopping anyone from using it for self education; if you're a beginner looking for good documentation in book form that covers all basic desktop tasks, give it a go.
