I need to move CaféLinux.org (http://cafelinux.org/) to a dedicated server, I want my server to use Ubuntu Server Edition.

The question is which version is better?

Ubuntu Server Edition 6.06 LTS-supported to 2011

or

Ubuntu Server Edition 7.10-supported to 2009

I guess the question is long term support vs latest release?

Which Server Edition do you use?

What are the benefits and drawbacks of each?

There is no advantage to running 7.10 unless you absolutely need the most recent version of, say, php5. That being said, I would think that running 6.06 is a lot more secure and will continue to be more secure that 7.10 since it is an LST and probably is used by more people.

Most (think 99.99 per cent) web applications today run just fine on the LAMP stack from Dapper. I don't think there is a performance difference either way.

Start with 7.10, upgrade it to 8.04 (LTS) when it is released and you will be done for a long time.

Yep. If you want a rock you're familiar with go with Debian.
