I just checked the WineDB, they have 0 entries on OneNote (office 2003 is rated varying from silver to garbage, with garbage as most recent oddly enough). CrossOver lists OneNote as being minimally tested but running apparently, 2003 version only. Neither option will be giving you 2007 any time soon.

Best advice is to try a native app for notes, here's a nice list. (http://linuxappfinder.com/utilities/notes) BasKet has been recommending before, give it a shot (in repos btw). If you absolutely need OneNote then you either a) use WINE b) pay for CrossOver or c) use a VM which will deliver best compatibility and even 2007 if you have it at the cost of being a complete virtual machine.

Try Jarnal its very similar to One Note you can the 64 bit version its a deb file at www.getdeb.net.
