Just curious... will there ever be an option on the ubuntu website to pick what applications are installed by default? For instance if a user wants thunderbird instead of evolution...... abiword instead of openoffice word... etc?

You can easily install these applications after a normal installation. To be able to have it while it is installed a server should packages all the wanted apps in a ISO file and ofter that for download. I could image that that would be a very lengthy and memory intensive process, without much extra benefits.

I would like if there was a DVD (or maybe CD) that lets you choose what to install. The DVD could have extra packages for alternatives like Abiword instead of openoffice, and the CD could let you remove ones you don't want that are on the regular Ubuntu live cd.

That sounds pretty cool. Guess in 20 years something like that would happen. :)
