O'Reilly's "Linux in a Nutshell", and starting off with Slackware rather than Ubuntu. Also, working in a computer recycling centre and installing Linux on anything and everything helped.

I may eventually try Slackware :) , but I got my start with Ubuntu by

1) Installing it.
2) reading the forums like crazy
3) O'Reilly's Ubuntu Hacks.

I tried the Official Ubuntu book but did not find it as helpful as the O'Reilly one.

I'm entirely self taught. Here's some good sites to start with:

For understanding terminal: Linux Command (http://www.linuxcommand.org/)
For understanding common things: Ubuntu Guide (http://ubuntuguide.org/wiki/Ubuntu:Feisty), Psychocats (http://www.psychocats.net/ubuntu/), Ubuntu Geek. (http://www.ubuntugeek.com/)
For finding apps you like: Linux App Finder (http://linuxappfinder.com/)
GRUB and bootloader info, well as other things. (http://users.bigpond.net.au/hermanzone/)
More specialized topics at the Wiki. (https://wiki.ubuntu.com/)

Mostly I just did what I do with everything else... read, make mistakes learn :). Just mess around, it all makes sense fast. :p

Gnome was so easy for me, I didn't really need much help for the GUI. It took time, but not much reading. I did have a book (came wit the CD) that helped me with mounting, but I didn't need much else.
For command line I used http://www.computerhope.com/unix.htm to start because I already knew the site and dos commands, so the chart gave me basic skills. Other sites helped too, I think.

Do you mean learning Linux as in admin-ing or developing?

all I did was just use it . . . if I ran into problems I went on the forums, tweaked a lot of settings on the OS and spent extensive hours fixing what I broke.

that's essentially how I learned. if you don't have a genuine interest in linux, give up now.
