Does anyone know of any affordable, reliable and trustworthy hosts that provide hosting with Ubuntu as the OS?

No, but synergybox.net has hosting using Linux servers. Plans start at $1 a month, and so far, my website has never been down, but there have been a few annoyances here and there. I'd say my service has gone better than the experiences many have had with big hosts.

What exactly do you need to host?

If it is a Linux or Open Source Project I have been toying with the idea of hosting free sites at CafeLinux.org

Thanks for the reply. I'm looking for Ubuntu specifically though. Found Linode.com (http://www.linode.com) and VPSLink.com (http://www.vpslink.com/) so far.

The only host I've seen offering Ubuntu systems so far is TekTonic (http://www.tektonic.net/unmanaged.html) on their VPS plans, but I'm not sure if that's what you're looking for.
