ubuntu is like every linux more or less, so you can search for linux books, or find some guides in the internet, probably beginners would like to learn something about how to configure desktop environment - so search for gnome(for ubuntu) guides to.

The official Ubuntu book is a good one. In fact, I've checked out just about every book there is on the Ubuntu desktop (as opposed to server), and they're all pretty good for a new user.

The best guides, however, are on the internet, especially since they can be updated more quickly (a lot of Ubuntu books are out of date).
