I found a program called Recuva on http://www.recuva.com/

It is said on the site that it is a freeware program that restores deleted files, even ones that have been lost due to viruses.
I do not use Windows nearly as much as Linux but I am trying to start a tech support business and I was wondering if this would be any good when it is the final version (it is in beta right now and it says on this site that commercial use isn't recommended)?

Try BackInTime. It's a front end to rsync.

So back in time takes a snapshot of my full ubuntu installation (20GB?)
is there a tutorial I can follow to take a snapshot of my OS?

Yes, or at least, of the files you choose. If you choose /, and make it recursive(with folders inside /), it'll do it all.
I'm not sure of a tutorial, try looking on that omgubuntu site.
