This has probably been done before, but I just felt like sharing the ones I used. Just for kicks.

Ook? Video Ook! (https://addons.mozilla.org/firefox/2584/) - I installed this when I was browsing through the extensions page. Haven't really used it to be honest.

Google Notebook (http://www.google.com/notebook) - One of my favorites. It's really useful for jotting down stuff, especially when you're trying to learn something, like a programming language

Gmail Space (https://addons.mozilla.org/firefox/1593/) - I havn't actively used this yet, but I know I'll need to soon.

Cooliris (https://addons.mozilla.org/firefox/2207/) - Useful for browsing places like forums so you can view links without opening new tabs. Neat one.

DownThemAll (https://addons.mozilla.org/firefox/201/) - I use it mainly for pages with lots of pictures or links leading to pictures. another useful one

ErrorZilla Mod (https://addons.mozilla.org/firefox/3336/) - Much, Much better than a 404 message. Super useful.

Gmail Manager (https://addons.mozilla.org/firefox/1320/) - An easier way to gmail. Good if you have multiple gmail accounts

Google Toolbar (http://www.google.com/toolbar) - I google stuff. A lot.

Tab Mix Plus (https://addons.mozilla.org/firefox/1122/) - Firefox 2.0 almost eliminated the need for this, but not quite. I need for it's tab closing options (closing a tab returns you to the last tab you were looking at). It's session manager is still better than firefox's native one as well.

Adblock Plus (https://addons.mozilla.org/firefox/1865/) - Of course.

Feel free to post ones that you feel are useful.

I have several more than these installed. Here are the ones that I have found most useful.

Ubuntu Forums Menu (https://addons.mozilla.org/firefox/2302/) - integrates a new menu item into Firefox with immediate links to most of the forums...very cool!!! I use it all the time.

Torbutton (http://freehaven.net/%7Esquires/torbutton/) - enables tor/privoxy with the click of your mouse once you set it up.

NoScript (http://www.noscript.net/whats) - lock down Firefox...no java scripts of any kind are allowed until you say so.

ForecastFox (http://forecastfox.mozdev.org/) - puts weather info in your Firefox frame. Pretty cool.

EDIT: I forgot one of my favorites...

AdBlock (http://adblock.mozdev.org/) - does what the name says. I like the FiltersetG (http://www.pierceive.com/) mentioned by someone else as well.

A fair few of my favourite extensions have been listed already. Here's the ones that haven't.

All-in-One Sidebar (https://addons.mozilla.org/firefox/1027/) - Helps keep clutter to a minimum. I hate having too many windows around.

Download Statusbar (https://addons.mozilla.org/firefox/26/) - Similar to the above, though being able to see rough download speeds at a glance (with Speed Colors) and being able to pause downloads easily is nice too.

Image Zoom (https://addons.mozilla.org/firefox/139/) - I wish it did bilinear filtering on scaled-down images like Konqeuror does, but Image Zoom is still pretty neat for looking at details that aren't obvious at 100% scale.

Linkification (https://addons.mozilla.org/firefox/190/) - Turns text URLs into proper, clickable links. Good for compensating for lazy posters (or for when browsing the GameFAQs message boards).

Stylish (https://addons.mozilla.org/firefox/2108/) - Some CSS is inconsiderate (not everyone uses black system text people!) or just plain ugly, and could really do with a rewrite. Stylish allows me to do that on this side until it can be fixed on the server side.

Gmail Notifier (A must.)

And two others I use:
ReloadEvery
Google Images Re-Linker

cool definitely some good ones in there so far. If you don't mind, please give a little description of what the extension does. I'm sure no one feels like jumping around ff extensions to find out. The auto-reloading and Ubuntu Forums menu ones look especially cool.

* GooglePreview (https://addons.mozilla.org/firefox/189/) adds thumbnails to Google searches.

* Foxmarks Bookmark Synchronizer (https://addons.mozilla.org/firefox/2410/) allows me to sync FF bookmarks between computers. Also, I can access my bookmarks from any web browser, almost del.icio.us-style.

* More Tools Menu (https://addons.mozilla.org/firefox/2413/) moves all Tools menu items added by extensions to a separate menu. Very useful if you have a lot of extensions.

* Tabs Open Relative (https://addons.mozilla.org/firefox/1956/) makes tabs open next to the current tab, instead of all the way at the right end.

* SubmitToTab (https://addons.mozilla.org/firefox/483/) lets me middle-click a form submit button to open the results in a new tab.

* PrefBar (http://prefbar.mozdev.org/) adds a customizable toolbar with easy access to a bunch of hidden preferences.

I'm really digging GooglePreview and Prefbar.

I should mention Tabs Open Relative functionality is included in Tab Mix Plus (link in OP), which does some other useful things as well.

My big ones are Adblock and Download Statusbar. I like my downloads being shown on the bottom of my window instead of a pop-up window.

What's better about Adblock Plus? I tried it once (because it said 'plus', so I figured it must be better, duh!), but I didn't like the interface. What exactly is improved in the Plus version?

Yeah, I know. I used to use Tab Mix Plus for that feature, and it's a very nice add-on, but in my opinion it does a little too much.

I'm on Firefox 1.5.0.7 from Dapper repos. These are what I use.
undoclosetab 20051204 (http://www.extensionsmirror.nl/index.php?showtopic=226) Allows one to open tabs you've recently closed. Rather handy.
EZNav (http://www.extensionsmirror.nl/index.php?showtopic=305) Makes level navigation of domains easy and increments URLs
NoScript (http://www.noscript.net/) Allows you to enable JavaScript only for trusted sites
BugMeNot 1.3 (http://www.extensionsmirror.nl/index.php?showtopic=566)> a registry & tool of usernames/passwords for many sites requiring login

AFAIK, Adblock Plus has its own filterset built in. Thats the major difference I saw on changing from one to the other.

I swear by the following:

Adblock Plus
Foxmarks Bookmark Synchronizer
All In One Sidebar (the theme I use pretty much demands the need for it)
Downthemall!

And that's actually all I have at the moment.

I used to have forecastfox enhanced, but apparently it doesn't play well with this theme (mac favicon).

google toolbar
adblock plus
adblock plus filterset.g updater
update notifier - lets me see if there are updates to themes/ extensions, lets me install them and also lets me restart firefox all from a easy dropdown button
ubuntu forums menu
popup alt attribute - (used to enable pop up alt atribbutes, now since this is native in ff, it can display multi like alt attributes, great for previewing posts in forums!
session saver - this kinda has been killed by ff 2.0's tab saving features (which you have to actiave manually), but still useful (once it gets updated to ff 2.0) cause it can save sessions and if you ever want to go back to it like a week after you saved it, you can.
noscript

Google browser sync - syncs bookmarks on all machines (and OSs) where it is installed

FasterFox - does just what it says

GoogleToolbar

PDF Download - Gives a choice to save, open, etc. each time you click on a pdf

Stumbleupon - something to do when I'm bored

User Agent Switcher - Some sites that I have to use for work still won't let me in with non-IE browsers. This lets me fool the sites into thinking I'm using IE.

why's that ??

is it because it says

Allows you to force the application to believe an extension is compatible with the current version and enable it.
??

i can already do that :D but on the addons.mozilla.org site for the plugin, the creator said not to force it (in the comments somewhere) though i looked just then and it seems someone else has made it compatible http://forums.mozillazine.org/viewtopic.php?t=476679 (yay!) :D

Wow, you guys know some great extensions!

Coriolis Previews (seems a bit unsteady in terms of doing its job, though?), Google Notebook and Submit To Tab are especially pleasing.

Here are a few of mine (sorry, no time to give you links; these actually kept me awake for an hour longer than I wanted...)

IE Tab. For those of us who must suffer with Windows and web pages that only like browsers which attempt to break web standards.

Flashblock. Like NoScript but for Flash!

Google Browser Sync. Exceptionally cool :) Keeps your browser the same (with everything except extensions) across computers. ...And it's Google, so you can trust that thing to stay alive for quite some time.

gTranslate. Translates text on the spot using Google. (Seemlessly, within a context menu).

Menu Editor. Very useful; with all these extensions, it becomes very important to tidy up those menus a bit. They tend to put themselves in too many places. (For example, ReloadEvery only really needs to go as a submenu of the Reload button, but it goes in the context menu and Tools menu as well!)

Do you know if I can get NoScript to block Flash but not Javascript? I like how it does it, but I don't like having to unblock all that JavaScript...

As mentioned before, "Google Browser Sync" is one extension that simply cannot be overlooked. I use several PC's and operating systems, and GBS keeps the bookmarks/cookies/history synced between all of them.
