How do I update vmlinuz and initrd.img of a LiveUSB

After an apt upgrade, the installed packages in a LiveUSB are upgraded, but not the vmlinuz and the initrd.img files. How do I update these files so the LiveUSB will boot from the new kernel?

Consider making a full install, the live media, even with persistence, does have limitations like you have encountered.
