This new printer is giving me fits. It's a Pantum P2502W. Works fine when I boot into Windows 10. I've got Ubuntu 18.04.3. I've gone through the install, loaded the driver, and all I get is "Job stopped." Nothing in the troubleshooting log. Oh, I'm on an Asus 52 laptop. Ideas?

That gives me nothing. I'm down to just trying to get the POS to work off the USB cable, and I still get nothing.

On 18.04 it has to give you something when the Pantum is on the network. What do you get for
avahi-browse -rt _ipp._tcp and
avahi-browse -rt _uscan._tcp

According to https://support.apple.com/en-gb/HT201311 the Pantum P2502W is an AirPrint device, but your data shows no sign that it is. Either AirPrint is not activated or the Pantum is not on the network. Not being activated is a possibility, as indicated by https://global.pantum.com/global/airprint-support/. A firmware upgrade would give you the capability of not using Pantum drivers.
Anyway, upgrading is up to you. For now, we'll take a look at your present situation.
You should have a PPD for the printer in /etc/cups/ppd. Execute this command
sudo cupsfilter -p /etc/cups/ppd/<the_PPD_name> -m printer/foo -e --list-filters /etc/nsswitch.conf and post the output. Do not type the angle brackets.
Now do
sudo cupsfilter -p /etc/cups/ppd/<the_PPD_name> -m printer/foo -e /etc/nsswitch.conf > out.dat 2>log
Look at log and say whether any of the filters fail.

That is what I would expect.
The second line had no results.
There isn't any output to the screen; the output goes into the file log. You can see it with
less log
We want to know if all the filters above run successfully. Also give the output of

Your error_log.2 shows
GPL Ghostscript 9.26: Unrecoverable error, exit code 1 This indicates a problem with your Ghostscript installation. You could try updating the system or reinstalling Ghostscript.

I've uninstalled and reinstalled Ghostscript. It still stops the job before printing.

All I can think of is directly testing the gstoraster filter, which uses Ghostscript:
cupsfilter -m application/vnd.cups-raster /etc/nsswitch.conf out.ras 2>LOGFILE
Have a look at LOGFILE yourself and also send it here as an attachment.

Just send it inline as you did with the troubleshoot-logs file. It is not very large.

Now do again exactly what you have done here but post what you get for this command:
cupsfilter -p /etc/cups/ppd/P2500W.ppd -m application/vnd.cups-raster > /etc/nsswitch.conf out.ras 2>NEWLOGFILE
amd post NEWLOGFILE.

OK, update. Obviously, the line "no ppd file specified" was the clue. I was able to locate an older install package, which said to first run the install without the usb cable connected to the printer. (?!!) I deleted all the previous files related to the printer before I did that, and it failed, then I connected the cable and ran the install package again. It worked. So, the printer is up and running, but I still don't understand why the PPD didn't load from the newer package. Maybe it's a glitch in the newer install program? Anyway, I really appreciate your time and help, Brian. I was beginning to think I was going to have to print everything through WINE!

A splendid outcome! Well-done for sticking with it and being patient. Sometimes, all that is required is time to reflect.
For future readers I'd like to point out a mistake of mine. The cupsfilter commands I gave should have been prefaced by sudo.. That is,
sudo cupsfilter.......
