Dear Sir,

I am Desktop engineer, Here we have all windows machine so i planned to install Ubuntu on all systems but i am confuse that what is stability means in OS, and also i want to know which of the Ubuntu version should i use ??? .

And Ubuntu desktop OS is totally free ??

It is free, you can donate if you like.
But if a larger business, you can purchase support from Canonical, otherwise you depend on fixing issues yourself with help from forums or other Internet sources.

There are versions and flavors.
Typically you want to use the latest LTS or long term support version, which has 5 years of updates. The in between versions become obsolete in 9 months and need to be replaced/upgrade to newer version.
I believe it is Debian that uses the term stable as opposed to testing. With Ubuntu it is the LTS versions that have longer support that may be considered more stable. Many servers use the LTS version, so major upgrades are less frequent.

Flavors are the various desktops, some are set up for older or lightweight hardware as lightweight systems.
