I'm planning to install Ubuntu 18.10 64-bit on my HP t610 thin client on a secondary hard drive. The thin client has Windows Embedded Standard 7 installed on its 16gb built in hard drive and I'm unsure if this version Ubuntu is compatible with it. I want to install Ubuntu on my HP t610 thin client because Windows 7 extended support is ending in a year from now and I want to keep using it after Windows 7 becomes unsupported.

If you have 2G memory, maybe Lubuntu or Xubuntu would be a better choice than Ubuntu. I'f recommend the Long Term Support 18.04 version, 18.10 only has 9 months of support. A standard legacy install should work to the second disk-- presumably you can boot off that disk.
