I have the latest Xfce v4.12 installed. Personally, I don't really like the new theme and icon preview in Appearance dialog, it's also a resource hog. Has anyone figured out how to permanently get rid of all those thumbnails and have the text-only lines like before?

There is no info about disabling this feature on Xfce.org. It belongs to xfce4-settings:

Isn't this just a configuration screen that you're only going to use once, or at least not very often? What do you mean it's a resource hog?

it's right there in the appearance-> settings

I guess that's how it should work but it doesn't. Inside Appearance window this will only turn off "images on buttons" but "images in menus" remain intact (although they disappear as expected in Applications Menu).

There is no configuration option to remove the previews - they are currently permanent. You should create a bug report / enhancement request to make them optional.
