Go back and forth between headless and having a desktop environment

Hi all,

I have a small singleboard computer (x64) that I want to turn into a home theater system. I want to install Ubuntu on it and then make it headless after installing all the software I want on it. However, I still want to be able to go back and forth between being headless and having a desktop environment, but I always want it to boot up as headless. I tried to find guides on this, but had no luck. Can someone lead me in the right direction please?
