I'm currently in the process of uncluttering my application menu, so far by just deleting entries i'll never use, though despite this there are still too many items displayed in each category for my taste. Ideally I'd like to add subfolders under each main category, to further categorize the launchers. Anyone happen to know how I would go about doing that, assuming it's possible?

If you're using Lubuntu 14.04, look at MenuLibre from the software center. That may help. This is what it says on the tin:
Description-en: advanced FreeDesktop.org compliant menu editor
An advanced menu editor that provides modern features in a clean, easy-to-use
interface. All without GNOME dependencies, so even lightweight systems can
benefit from the sanity that MenuLibre offers. MenuLibre is your one-stop shop
for menus in Linux, whether you use GNOME, LXDE, Xfce, or Unity.

I don't rely much on menus. I set up my own keyboard shortcuts in lubuntu-rc.xml.
