I don't fully understand.
Do you want to install other software while it's installing?
Or do you want to learn how to make a customized installation disk, with added software?

Welcome.

If I understand you correctly, I have two words: minimal install.

Not exactly what (I think) you mean, but perhaps as close as you'll get. You install just the Ubuntu base kernel, then add only what you want. You can go further and try Linux From Scratch, or even Arch.

For ease of use for ordinary people the Ubuntu install process installs a complete Linux distribution that will suit most ordinary users needs. We also have the Ubuntu Software Centre where we can, in one click, add and remove applications. So, for example, if we have no use for the small number of games that are default installed we can easily remove them. Ubuntu is intentionally designed not to give us a bewildering choice of install options.
