Many of the phones I have gotten in the past are almost impossible to root(especially from Ubuntu) and don't play well with Ubuntu. I'm looking a phone that is as easy as possible to root and can handle a few apps running at once.

The Nexus 4 device is something to consider - and there is also an all in one rooting toolkit available for it designed for Linux.

That toolkit will work on any of the Nexus devices - have tried it with my Nexus 7 tablet and works great :)

Some more reading about rooting with Ubuntu (as ADB and Fastboot are now natively supported too)

The Galaxy S3 can also gain root access using Ubuntu:

Those are a good place to start, most devices can obtain root easily with Ubuntu. :)
