I was under the mistaken impression when i downloaded an ISO that the AMD64 image was only for AMD processors, so i installed the x86-32 version. Now that i know i can actually use the 64-bit version, is it safe to install it over the top of my current installation? Will this be seen as just an upgrade, or could there be potential conflicts? Thanks!

You'll need a fresh clean install, but you can install into the same partitions.

It won't be an upgrade, so ensure that you have saved everything you wouldn't like to lose before commencing.

One more point to bear in mind is drivers. If everything worked out of the box with Ubuntu you have nothing to worry about but if you had to install 3rd party drivers then check there is 64-bit support for these.
