I own a Toshiba Thrive AT100. It has a full sized USB port as well as a full sized SD card. Should I wait for the mobile version to come out or is there another way to run Ubuntu on my device?

You can run Ubuntu alongside Android.

Ubuntu Phone will not be installable on any mobile like desktop Ubuntu. It is intended to be preinstalled on phones or installed onto the Galaxy Nexus, which is the development phone.
