chrome is built from chromium. They are almost one in the same.

Here are the differences. http://code.google.com/p/chromium/wiki/ChromiumBrowserVsGoogleChrome

Yeah, I haven't noticed any real difference in performance.

This sometimes affects the web browser performance too, currently:
Google Chrome 23.0.1271.64 uses PPAPI Pepper Flash 11.5.31.2
Chromium uses NPAPI adobe-flashplugin 11.2.202.251 or manually installed Pepper Flash

Iron, Commando Dragon, and Chrome are all derived from Chromium. Chrome has support for codecs that Iron doesn't but I don't know about Chromium. I have benchmarked all my browsers at the link. http://peacekeeper.futuremark.com/

The main noticeable difference is Chrome includes Flash while Chromium requires a separate install. FWIW Chromium seems a little quicker.

I run them side by side in Lubuntu with Chromium default because
a) there's less personal tracking in Chromium, and I want to minimize personal disclosure to Google, and
b) Google seems to configure its own web services e.g. Docs, iGoogle, Maps, etc. to run better under Chrome, and since they're tracking anyway the privacy is already gone. So I "silo" Google services in Chrome, otherwise use Chromium.

I'm very pleased that both browsers are still current for my Lubuntu 10.10 install. I'm not going to upgrade the OS so it's great to have up to date browsers.

Google Chrome is the browser you want. Chromium is only used if you want a fully open-source version. But if that doesn't bother you download Google Chrome as it has built-in flash support, pdf viewer and loads more proprietary plugins.

Personally I use Chrome for YouTube. As I said, I think everything by Google seems tweaked to work a bit better with Chrome. (Google Docs even puts up an alert message about using an unsupported browser in Chromium.) I don't see much difference with Vimeo, or Bloomberg TV stream which is pretty demanding, and for that matter if I find an embedded Youtube video on some other site it works fine in Chromium.
