I'm leaning toward the 7970 mainly because of the VRAM, and the higher -bit amount. However, the GTX 680 requires one 8-pin connector, rather than two (even though the 7970 will likely take less power to run.) I've only got enough money for one of these two (next month even) so don't suggest a 7990 or 690.
I'm not opposed with sticking to Windows, since a lot of my games would perform horribly on Linux as it is. (Some won't even run at all. (http://latale.ogplanet.com/en/intro.og) - See this thread (http://ubuntuforums.org/showthread.php?t=802851).) So if you're basing it all on Linux compatibility, then it's not good enough to choose one over the other in this case.
