adding a custom application to Unity launcher

There is a particular spreadsheet that I look at almost every day.

Under gnome, I created a custom application "localc spreadsheet.ods" to open that spreadsheet and locked the application to the launchpad (bar at top of screen). Also created an icon (SVG, 32x32) to represent the application, so that clicking the icon would open the spreadsheet.

How can this functionality be duplicated in Unity?

Install the alacarte package by any means you like, then make your own launchers as you choose via the "main menu" app. :)
