anyone know how to edit the color of the background of the "resources monitor" applet in the lxpanel? default is black and i would like to change it

Not sure what you want to do, but if you right click on the panel and choose Panel Settings->Appearance you can change the color of your background fonts, etc.

i want to change the graphs background color from black to something else

If you are talking about the background color of the icon then I think you need to install another icon.
I believe that the what you are looking for can be found at
/user/share/applications
