Video Codecs

Hi, I was wondering if someone could explain, or point me somewhere that could explain about video codecs. I pretty much just want to know the pros and cons of each. The main reason I ask is because I back up all my DVD's onto cd's and I want to know what the best codec to rip it with is. My choices are: Mpeg4, Avi, Ogm. Within each I have options like what sound codec thing to use etc... What sound codec do I use? mp3/vorbis/... (I use handbrake to rip)
