i have too many (or not) processes open and sleeping i understand this is, so if i choose to open them they can open faster, but i dont need bluetooth as an example of many other processes.

is there a way to stop this processes to launch?

and also to know which ones are vital for ubuntu to run well?

You can use utility called boot up manager (bum) to disable services loading at startup
You can google for the service names shown in BUM for your ubuntu
