Java version 7 update 5 just became available this morning.
The red link in my signature will check your version and also provide a link to download the latest version.
Choose either the Linux version for 32 bit machines or the Linux x64 version for 64 bit machines.
Do not choose the RPM version as that is for other distros besides Ubuntu.
Choose "save" the file to your Downloads directory and do not use Archive Manager.
The file will be in .tar.gz format.

The green link will provide instructions on how to update java.
You just copy and paste the commands. Since the web page has not been updated to 7.5,
I used gedit to paste the commands to and changed the 4 to a 5 before copying them again and pasting them into terminal.
32 bit instructions are on the left and 64 bit instructions are on the right.
It says to first remove the old version and a link is provided to take you to the bottom of the page where the removal instructions are.
Then just go back up to where you see HOW-TO FOR 32 BIT UBUNTU on the left or HOW-TO FOR 64 BIT UBUNTU on the right.
Just follow the instructions carefully and you should not have a problem.

Once completed, the instructions will tell you to restart your browser and look in
about:pluginsYou should see Java(TM) Plug-in 1.7.0_05.

I updated my Lucid Lynx 10.04 install first and just updated my Precise Pangolin 12.04 install.
Both worked flawlessly.
