I need to change my desktop theme. I dont like the shape and colors of my desktop icons, the color of my browser, etc. In the old Ubuntu, they used to have a place where you could just select an entire theme pattern. Where is this in 11.10? I am running in "classic" mode.

You will have to find some GTK 3 themes and icons you like from http://gnome-look.org/

The old the theme selection setup is not compatible with Gnome 3 .
