I am currently using Ubuntu 10.04 LTS (Lucid). Supposedly we have a 3 year support for the system.
However, I've read a commentary that "security updates and bug fixes will be available for another year on desktop versions of Ubuntu 10.04. However, images and installable media will only include updates made to the operating system to date".
I'm not certain what they mean by "images and installable media made .. to date".
Any clarification would be helpful. Does that mean any applications I've installed post system installation will not be updated?

The date referred to is the date the ISO image was created.
For example, do you still have the install disk from when you first installed 10.04? Now, the image on that disk will not be up to date with all the things that have been updated since that image was created.
This is why when we do an install we are advised to have a working internet connection and we are asked to allow the OS to be updated as part of the install.
So, if you re-installed 10.04 using that disk you would be out of date with all the security fixes.
We do not get daily created ISO images for Ubuntu distributions. Only for development branches because changes to the next version of Ubuntu are made daily.
You are only supported with "security updates and bug fixes." It says nothing about bringing you the latest improvements to third party applications. Those you get with the next version of Ubuntu.
This is why people choose an LTS release. Things stay the same for 3 Years.

Thanks for the clarification. I have received all of the security updates on a regular basis over the past 2 years via the update manager notifications that appear shortly after logging in for the day. So, I'm good to go for another year with Lucid.
Updates or fixes for third party applications, e.g., LibreOffice, also do show up in the update manager.
I prefer the LTS over upgrading every 6 months. The system has been stable for 2 years without a hiccup in performance.

The date for these ISO images is February 2012. So, they are as up to date as your present install. I like to keep a fairly up to date live CD around just in case I need to re-install.
Yes, we do get updates for things like Libreoffice but what version do you have. I am using 12.04 beta 1 and that comes with Libreoffice 3.5. I do not think that you can get it with 10.04 unless you do it through a PPA. That was the point I was making.
And this is not a bad thing either
The system has been stable for 2 years without a hiccup in performance

Thanks for the comment about PPA for libreoffice. That was not on my list for third party PPAs.
