I am looking for a rock solid and not too expensive 4port-RAID controller that supports RAID5 to replace my 3ware 9650SE-4LPML (that resets under heavy load).

What can you recommend?

PS: Can I use my SATA-drives with all SAS-RAID-Controllers?

I don't know about "all," but I have recently installed both CentOS 6 and Ubuntu Server 10.04 successfully on a Dell R410 with a SAS 6ir controller. It requires a kernel module, but both distributions installed the module by default.
