I recently rescued my aunt's old laptop and installed Ubuntu on it. While this has made it much faster than its previous Windows XP installation, I think I should have instead installed Xubuntu.
Is it possible for me to simply convert my Ubuntu 11.10 installation to Xubuntu 11.10, or do I need to delete this partition and start over?

yeah. You can do this several ways.
First
sudo apt-get install tasksel
sudo tasksel
uncheck ubuntu-desktop and choose xubuntu-desktop
hit OK let the system do the rest.
OR, install xubuntu-desktop
Then run the command on here
http://www.psychocats.net/ubuntu/purexfce
Or just install xfce with Ubuntu
sudo apt-get install xfce4
