With less words you mean all ubuntu server CDROM versions are NOT live, and procedure to install differs from ubuntu desktop? Is this difference significant?

correct

they are NOT live and DO NOT contain a GUI for easy visual installation.

Once inserted an ubuntu server CDROM to install, after boots is easy to abort, at startup, if find difficulty when get install it?

Yes, you can cancel the install depending how far you went, but even that might write new partition table as soon as you pass the partitioning step.
If you just want to play with it, why don't you install it in something like Virtual Box?

The install procedure is similar to XP, if you have ever installed it. It's only text based, no GUI during the install. And the installed server system doesn't have GUI by default neither. Of course the install of ubuntu server is more complex with more options than XP, but the look is similar.
