Hi, is there a "preferred" way to get a trimmed Ubuntu Desktop? By this I mean Ubuntu without Unity, Evolution, the office suites etc?

I've experimented with setting up a console installation using the mini installer, then doing:

#sudo apt-get install --no-install-recommends ubuntu-desktop gnome-shell

Seems to be OK. Is there a better way? Am I missing something obvious?

I don't know if there is a "preferred" way. But if what you have done works, then it is good enough.

If you are really interested in lean and mean Ubuntu then have a look at Ubuntu-Core (https://wiki.ubuntu.com/Core);
if you don't mind going through the effort to have exactly what you want on your Computer and don't mind having fun doing so, then give it a try.

Also, ArchLinux is a good distro to control your OS and have only what you need.

Search for other desktop managers in your package manager, such as the XFCE or see this; http://linux.softpedia.com/get/System/Operating-Systems/Linux-Distributions/Ubuntu-GNOME-Shell-Remix-74925.shtml , and; http://ubuntuguide.net/ubuntu-11-10-install-classic-gnome2-desktop-linux-mint-mate, and http://ubuntuguide.net/ubuntu-11-10-oneiric-login-to-classic-gnome2-and-gnome3gnome-shell
