I'm working on a kiosk platform for guests in Ubuntu 10.04. I can get it to work with just the Internet.. Where basically firefox opens as soon as the computer turns on in full screen mode with a kiosk extension such as r-kiosk or kioskfox.

I'd like to be able to have an additional platform where the guests can also access programs like openoffice along with the internet.

I know how to create an account with low permissions and make it automatically login.. but in the desktop environment, they have access to too much other stuff- Such as the ability to change the wallpaper, screen saver, etc.. Is there anyway to give them access to a desktop environment, but with only the ability to access the selected programs and not be able to change other options?

I have stumbled across this in the Software Center, it's called Lockdown Editor, it might do what you want.
