How do I create an extended partition and create a logical partition onto the extended partition that I have just created? I want to install Ubuntu 11.10 on a logical partition.

Yep, all good so far,

simply click on an unallocated section of the HDD, select new, partition, (then select what kind of partition, primary, extended or logical).
