After looking on the web it says to click the + or - bottun to encrease or decrease workspaces. I don't have that. Running 11.10 64 bits

Those buttons were in a very old version of the shell. In the current shell, workspaces are created on demand. In other words, you will always have one empty workspace. If you'd rather static workspaces, there's an extension (http://intgat.tigress.co.uk/rmy/extensions/index.html) for that.

In Gnome-Shell the WORKSPACES are created dynamically. That is, a new empty one is added when use one. There is always one extra blank.
