I highly recommend this tutorial:
http://flurdy.com/docs/postfix/

But I highly recommend that you have a dedicated box for this.
In other words, I don't think a laptop will do...

the only computer i could possibly run the server on that is not a laptop is an old desktop with 6 gigs of hd space, and 256 mb of ram running puppy linux

Citadel. I had it running on an EeePC.

It should be sufficient, the Recommended Minimum Requirements for Ubuntu 10.04 LTS server is 128 mb RAM/ 500mb-1GB HDD.

A few months ago I ran Ubuntu 8.04 Server on a machine with only 64MB RAM & 6 GB hdd.
It struggled a lot when I tried to install joomla, though! My current server has 4GB RAM which is quite a luxury! :D

What? Installing the server OS, or postfix? If you're going to run your own email server you have
to make sure it is fully secured, etc. Again: have a look at the tutorial I provided.
