In 11.04 I was able to tweak some of the theme colors. However, it seems that all the system settings applets in 11.10 have been severely dumbed-down. Is there another way to tweak the theme colors?

Gnome 3 no longer includes that option , so you may have to look at the Gnome Color Chooser . I don't know if the Gnome shell has extensions for that feature because I haven't tried it yet . I do know that I have a bunch of themes in usr/share/themes that don't appear as options in Unity .
