I love ubuntu, but the base install comes with too many programs, I only have 6 Gigs on my laptop and need every Meg! Ijust wanted to know if there is a list of software safe to remove or should I wade through putting a gui on the server install? And what exactly do I need to install for a minimum gui from server if that is the case?

You dont need / dont need / should not / will not use a gui on a server.

Basically you can safely remove xorg / xfree (if apt does his work).
