Is there away to make the desktop in 11.04 look like it did 10.10?

Choose "Ubuntu Classic" as the "Session" option at the bottom of the login screen, after clicking at your username, but before entering your password. If you have passwordless login enabled, disable it before via "Users and Groups".

When you log out does it not take you to the login screen. Just select classic gnome from there and log back in.

Well in that case go to System>Administration> Log In Screen and change it there.
