I just move from 10.10 with gnome 2.32 panel to 11.04 with unity panel. I like them both so here is what I did.
do a Alt + F2 and run:
gnome-panel
The gnome panel will appear on the top of the desktop. Right click on it and select "Properties" and move it to the bottom.
You will now have the gnome and unity panels on your desktop.
If you want this to run at startup just add this command to the startup applications and the you will have the gnome panel every time you boot up.
