Want to uninstall new version

simply choose ubuntu classic no effects at login time to get rid of ugly unity

Go to Administration -> Login -> change to Ubuntu Classic, so it will always choose old desktop.

once you are in standard gnome for the first time, go to
system -- administration -- login screen
to set up the way you want to login by default.
