Change .icon EmbeddedText size/color/font

So I'm just now learning how to configure .icon files to allow certain mimetypes to display their text embedded in an icon. However, this text is rather large and not always the right color (I mean, it's always black, but sometimes I may want to change the color). How can I alter the appearance?
