Is there any way I can prevent OpenOffice automatically installing when using the Alternate disc?

I want to install a different package (LibreOffice 3.3) without having to uninstall Ubuntu's OpenOffice.

No, as far as I know the alt installer doesn't let you select individual packages. You could install the base system and then add packages you need, avoiding Open Office, but the end result won't be Ubuntu 10.04.
