Here are three applets I like which aren't included in the default "Add to Panel" window:
Browser Bookmark Menu (http://browserbookapp.sourceforge.net/) - dropdown list with your prefered browser's bookmarks
Quick Lounge (http://quick-lounge.sourceforge.net/) - dropdown menu that you can fill (and order) with programs, a sort of little Applications Menu.

Web Sharing (http://veldstra.co.uk/websharing/) - for easily running a little server (Mathopd (http://www.mathopd.org/)) where you can host downloads or html files. Just start it up and point your browser to your computer's IP, port 8000 (e.g. xxx.xxx.xxx.xxx:8000). Drop any files you whish to share in the "Website" folder placed in your home dir.
