I am looking for an electronics lab that I can plug into a usb port and utilize with software to program various electronic outputs, like moters, switches, etc... any ideas?

Either that or the BASIC Stamp. If you're looking for more of a "hacker"-DIY thing, I'd say Arduino. If you're looking for more of a portable electronics classroom, I'd say try the Stamp, not because it's better or worse, but because the educational support (texts, bundles, etc) is more comprehensive.

Sorry, I forgot to post the link:

Specifically, something like this might work for you:
http://www.parallax.com/Store/Education/KitsandBoards/tabid/182/CategoryID/67/List/0/SortField/0/Level/a/ProductID/320/Default.aspx
Again, not saying that one system is better or worse than the other, but I've found the Stamp tutorials/educational system to be more comprehensive. As always, though, YMMV.
