You mean running (for example) Samba and Apache at the same time? Sure, go right ahead. This is not Windows which basically requires one server, per offered service :).

If you're thinking of Virtualisation then that's a bit more tricky. Possible ...but tricky. You'd need to read up about VMWare, Qemu and Xen.
