I would like to use many of the programs that come on Arche OS (http://www.archeos.eu/wiki/doku.php?id=start) (note this is Arche, a debian based OS, not Arch :p)

In their FAQ they suggest it's better to stick with them than try to install the software on Ubuntu:

Why should I install ArcheOS, when I can just add all its software in Ubuntu?

Not all the utilities of ArcheOS are easy to install in Ubuntu, many of them have no packages and for others the compilation is difficult (due to library dependencies or compatibility). ArcheOS gives a complete Operating System ready to be used, sparing the time to collect and compile all the needed software.

BUT, I'd like to run the programs on a tablet and would like to try it with Unity.

So my question to the forums is would it be worthwhile to install Arche Os and then migrate to Ubuntu or should I try installing all the programs individually on my tablet?

the only way you could move to ubuntu is a clean install.

unity requires 3d acceleration, so if your vid card can do that out of the box you'll be fine.

all ubuntu's can be run live, so i suggest you do that.
