which is the best package in gnome for making a dock??
I would also like to add some screenlets showing CPU info, time,etc.

I use GLX Dock (Cairo Dock with OpenGL) that integrates well with Compiz.

I never used screenlets. So, no idea.

Here is GLX Dock (Cairo Dock with OpenGL) in a screenshot with some of my personal custom icons. For the other items you can use Cairo Screenlets, or something like gkrellm.

I have used GLX and I am currently using AWN , I like them both .

Awn with clock and hardware sensors.

+1 for awn, it's the best replacement for gnome panel.

Awn, glx-dock, and docky are all very good. I personally like glx-dock but they are all great. For screenlets glx-dock has that built in!
