One of the last few things that kept me from abandoning Windows was Sogou Pinyin, a fantastic program for typing Chinese.
The main feature I liked was its "predictive" quality, that it would guess what Chinese characters I wanted from the context. Sped things up a lot from the bad old days when I'd have to individually select each character.
The latest version of Ubuntu now offers predictive text for Chinese! Here's a great website with the instructions:

Out of the different Chinese Input Method Editors (IME) available in Ubuntu, my favorite is "Pinyin," with a capital P. Same awesome predictive feature as Sogou Pinyin.
It's a really niche issue, I know. But now I can go 100% Ubuntu.
